Don't quote me but I think "green" Grade 2s start on $200/day casual or $45K salary at a decent school.

Yes , there is a demand for grade 2 instructors. any road trip would see you get a job somewhere pretty soon. might not be with who you want but it would happen.
Pig is right about the dollars for a green grade 2 with 4-500 hours. if you have line pilot experience as well that you can take to a company with say, 1000-1500 hours. you can add 10 grand to that.
get in and do it. you wont regret it.
