Thai Mince

Here's one of my personal favourites, quick, easy and tasty too.

1 tbs Garlic
1 tsp ginger
1 tsp chilli
1 tbs oyster sauce
2 tsp fish sauce
1/2 tsp pepper
1 cup fresh basil
2 fresh chillis
1/2 kg lean mince

Brown the mince and seperate lumps. Add all the ingredients except basil. Cut the fresh chillis down one side, take out the seeds. Mix well, add the basil after a few minutes. Remove the fresh chillis. Serve on fluffy rice with a little basil for garnish. Sounds a little odd but tastes fantastic. I use bottled garlic, ginger and chilli. Fresh chilli is optional. Dry basil is OK but not as nice.

drink suggestions for your thai dish

Wildfire

20 drops Tabasco sauce
1 shot tequila
1 shot peppermint schnapps
beer

Put the tabasco sauce in a shot glass. This is the firestarter. The tequila shot is the propellant which spreads the fire. The peppermint schnapps shot brings the fire under control, and finally, the beer puts out the last of the flames.


The Extinguisher

1/2 oz vodka
1/2 oz gin
1/2 oz rum
1/2 oz Grand Marnier orange liqueur
1/4 oz Tia Maria coffee liqueur
1/4 oz Kahlua coffee liqueur
1 oz sweet and sour mix
1 splash cranberry juice
top with draft beer

Combine all alcohol in 12 oz. glass with ice. Add Sour Mix. Add a splash of Cranberry Juice to form a layer of red at the top of the glass. Top with foam from draft beer tap.

Thankfully CASA hasn’t followed the FAA drug & alcohol inspectors in making early morning house calls!
